Welcome foodies, I love a good chocolate cupcake and these are truely divine! Not to mention the eye-catching contrast between the chocolate cupcakes and the white vanilla buttercream frosting! I definitely recommend giving this recipe a go!
Ingredients:
Chocolate Cupcake Ingredients:
- 1 cup of plain flour
- 1/2 cup of caster sugar
- 1 tsp baking powder
- 1/2 cup of cocoa powder
- Pinch of salt
- 1/2 cup of butter
- 1/4 cup of dark chocolate
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Vanilla Buttercream Ingredients:
- 1/2 cup of butter
- 1 tsp vanilla extract
- 1 1/2 cup of icing sugar
- Pinch of salt
- 2 tbsp of heavy whipping cream
How to - CHOCOLATE CUPCAKES:
1. Preheat oven to 170 degrees Celsius, fan forced. Fill a cupcake tin with patty pans.
2. Combine dry ingredients in a bowl (plain flour, caster sugar, baking powder, cocoa powder, salt). Make a well in the centre
3. Melt butter and dark chocolate in a saucepan on low heat. Once melted add to bowl/ pour into well.
4. Add eggs, vanilla extract and milk to bowl, mix until everything is combined.
5. Fill the patty pans 1/3 of the way with the mixture. Bake in oven for 15-20mins or until cooked through (test with skewer).
6. Leave to cool (around 10mins), while cupcakes are cooling make icing.
VANILLA BUTTERCREAM ICING:
7. Whip butter until fluffy.
8. Add icing sugar gradually, along with salt and heavy whipping cream, then continue to whip until combined.
9. Ice cupcakes with piping bag or you can create your own using a zip lock bag!
