Welcome foodies, I had a handful of over ripe bananas in need of a purpose. So I went straight to banana bread, the perfect, easy, quick and delicious bake for any day. My recipe is extremely moist and fluffy with a strong banana flavour, be sure to give it a go.
Ingredients:
- 1/3 cup of butter (melted)
- 3 tbsp of olive oil
- 1 tsp vanilla extract
- 1/4 cup of brown sugar (packed)
- 1 egg
- 2 mashed ripe bananas
- 1/4 cup of milk
- 1 1/2 cup self raising flour
- Pinch of salt
- 5 chocolate buttons
How to:
1. Preheat oven to 180 degrees Celsius, line a bread tray with baking paper.
2. Combine butter, olive oil, vanilla extract, brown sugar, egg. mashed banana and milk in a bowl.
3. Sift in self raising flour and salt into bowl, mix until combined.
4. Pour mixture into bread tray and spread out evenly. Place chocolate buttons on top of batter as decoration.
5. Bake in oven for 30-35 mins.
6. Serve with butter.
