Rice Paper Wraps

Welcome foodies, feel free to get creative with this recipe, I have provided an idea down below of what you could fill your rice paper wraps with. However you can personalise your tasty clear wrap however you like! I love these wraps, they make for a fun and creative way to have dinner, I hope you give them a go! Be sure to watch my video on how to fold these wraps as it can be tricky.

 

Ingredients- Makes-10

- 9 Chicken tenderloin pieces (or any meat of your choice)

- 200g of Vermicelli noodles

- 10 sheets Rice paper

- Baby spinach

- Baby rocket

- Smoked Paprika (to season)


How to-


1. Defrost chicken tenderloins.

2. Once chicken tenderloins are defrosted, spray a frypan with oil and cook chicken, sprinkle with smoked paprika. Once chicken is cooked cut into smaller strips.





3. Boil water in a medium sized pot, once bubbling add vermicelli noodles. Make sure that the noodles are standing vertically in the pot.


4. Use tongs to submerge the noodles and seperate them, boil them like this for roughly 2mins. Then stir noodles fully submerged in the pot for 2mins, after stirring turn off heat and leave the noodles to sit submerged in the pot for another 5mins, before draining the noodles and running them under cool water.




5. Fill the bottom of a plate with warm water and place a rice paper sheet in the water. Leave the sheet in the water for around 30 seconds or until the sheet becomes flimsy and clear, then gently place the cooked wrap on a damp tea towel.





6. Place your filling (chicken, vermicelli noodles, baby spinach and rocket) at the top of the wrap and roll downwards 2 times before folding in the corners, then roll downwards again. Watch video below for rolling technique.
