Chicken Noodle Soup

Welcome foodies, here's a perfect cold weather dinner that will surely warm up any chilly night. Chicken Noodle Soup! Packed with tasty flavours, veggies, my personal favourite noodles and of course chicken!

 

Ingredients:

- 6 cups (1 1/2 Litres) of Chicken Stock

- 1/4 cup of Red Onion

- 1/2 cup of Spring Onion

- 1/2 kg of Diced Breast Fillet

- 1 cup of Carrots (chopped)

- 1 cup of Baby Corn (chopped)

- 200g of Vermicelli Noodles

- 1/2 cup of Snow Peas

- 1/2 cup of Spinach

- 1/2 tsp of Chilli (chopped)

- 1/2 tsp of Jalapeno (chopped)

- 1 tbsp of Bean Sprouts


How to:

1. Cook breast fillets while boiling soup in a fry pan, once cooked set aside until needed.

2. Pour chicken stock in a large pot/saucepan.

3. Add red onion and spring onion to pot and boil at medium heat for 5mins .

4. Add carrots and corn to pot and continue to boil for 10mins.

5. Add vermicelli noodles.

6. Once noodles are almost cooked, add snow peas, cooked chicken, spinach and rocket, continue to boil for 5mins.

7. Serve in bowls and top with chilli, jalapeno and bean sprouts...
