Welcome foodies, there's nothing better than the aroma of freshly baked muffins filling my kitchen in the morning. These blueberry and white chocolate muffins are extremely light, fluffy and taste amazing 🤩One of my favourite muffin combos that I suggest you try too!
Ingredients:
- 1/4 cup of Butter (melted)
- 2 tbsp olive oil
- 1/4 cup of Brown Sugar
- 1/2 cup of Milk
- 1 egg
- 1 tsp of Baking Powder
- 1 cup of self raising flour
- Pinch of salt
- 1 tsp Vanilla Extract
- 1/2 cup White Chocolate Chips
- 1/2 cup of Blueberries
How to:
Preheat oven to 180 degrees Celsius, line a muffin tin with patty cases.
Combine butter, olive oil, brown sugar, milk, egg in a bowl and mix.
Sift in baking powder, self raising flour, salt and add to bowl.
Once combined add vanilla extract, white chocolate chips and blueberries to bowl.
Fill patty cases 1/2 way with muffin mixture.
Bake in oven for 20 minutes or until risen and skewer comes out clean.
8. Leave to cool slightly (till warm) and serve...
